I was thrilled to be invited to Scotland for an exquisite journey of culinary sharing and industry insight in Inverness and the Outer Hebrides. During the trip, I experience the beauty, strong heritage, and culinary delights of Scotland, where natural assets and dedicated producers yield a fantastic larder of some of the best produce in the world.
My visit began in Inverness and departed early for Keltic Seafare, then travelled west to the Scottish Salmon Company’s newly expanded hatchery. Along the way we stopped at an incredible seafood bar for lunch that boasted spectacular views and a daily catch brought straight from the boat to the kitchen door.
The following day we took an early flight on a tiny plane to Stornoway, where we let with processors Macduff Stornoway and then the father and son team at Stornoway Smokehouse. We travelled down to Leverburgh to join local fisherman Neil MacLean for a creel fishing trip and finished with a private tour of the Isle of Harris Distillery just before picking up shellfish directly from the creel fishing boats for dinner which were some of the best I have ever seen!
Our final day began with an early drive out to the Hebridean Mussels Shellfish despatch centre to see mussels graded, followed by a visit, on boats to the Scottish Salmon Company’s farm and ended the trip with a delectable lunch at one of Stornoway’s finest restaurants which I highly recommend.
