Quick & Easy Breakfast Pot with Strawberries

A bright start to the day—creamy, wholesome, and topped with the sweet juiciness of fresh strawberries. Simple, satisfying, and utterly moreish.

INGREDIENTS

Breakfast Pot

Handful of raw oats

12 raw almonds with skin, sliced

1 tsp sunflower seeds

1 tsp pumpkin seeds

4 dried apricots, chopped

150ml coconut water, to soak

1 tsp chia seeds

2 heaped tbsp yogurt

Zest of any citrus

Grated or diced fresh fruit of your choice

Optional: a little peanut butter

Method

Mix all ingredients together and leave to soak for 3–4 hours, or preferably overnight, to rehydrate.

Garnish with cut fruit, toasted flaked almonds, and a little fresh citrus zest (lime or lemon) before serving.
