150g blackberries
200g peeled & diced apples (Granny Smith or Braeburn)
Half a cinnamon stick
Fresh lemon zest
200g oats
200ml semi skimmed milk
100ml water
2g salt
Add pinch of cinnamon
1 tbsp frozen blackberries
Place the apple into a pan with the cinnamon stick, vanilla, lemon zest and 2 tbsps of water. Sprinkle in the caster sugar, cover with a lid and cook on a low heat for 10 minutes, stirring now and again.
Add the berries and cook for 5 minutes until they are slightly soft and the juices are seeping out.
Place all the above into a pan and bring to a slow simmer, stirring now and again at a gentle pace. If it needs more liquid just add some more water.
When serving, place the compote into the bottom of the bowl and the porridge on top, then dust with a little cinnamon and drizzle with honey. Add a little cream to make it a little richer in taste.
