2 slices multi-grain country bread (1cm thick)
50ml olive oil
150g mozzarella, sliced
Fresh lemon zest and a little juice
Maldon sea salt and freshly ground black pepper
5–7 basil leaves
Aged balsamic vinegar, to serve
Drizzle the bread generously with olive oil and season well with Maldon salt.
Grill on a hot grill until golden and crisp on both sides.
Reduce the heat slightly, lay the mozzarella over the toasted bread, and grill gently for 2–3 minutes until just warm and beginning to soften.
Finish with a little more olive oil, seasoning, a squeeze of lemon juice, and a fine grating of lemon zest.
Scatter over the basil leaves.
Serve immediately, with aged balsamic vinegar on the side.
