Fermented Turnips

Crisp, lightly sour and clean-tasting fermented turnips, adding brightness, texture and a gentle acidity to dishes.

500g turnips

10g Maldon salt

Method

Peel and thinly slice the turnips, mix thoroughly with the salt, then pack tightly into a sterilised jar or vacuum pack. Leave to ferment at room temperature for 1 week, then drain and store chilled, using as needed.
