500g minced beef
50g finely diced shallots
3 finely chopped garlic cloves
10g salt
3g crushed pepper or large pinch
2 egg yolks
Large pinch of fresh dried thyme
1 tbsp of Ketchup
1 tsp Dijon or English mustard
1 red and green pepper, thinly sliced
1 red onion, thinly sliced
3 cloves garlic, finely chopped
Small nugget of ginger, finely chopped
2 bay Leaf
A few sprigs of thyme or dried thyme
60g brown sugar like demerara
200g or ml of white wine vinegar
2 finely chopped red chili
Pinch of dried chili
8g coarse salt
2g finely crushed black pepper

Place the minced beef into a bowl, mix this through using your hands along with all the other ingredients, then form into little 150g patties.
Chill to set firm
When you are ready to use, season with salt and pepper, then cook medium rare and place the smoked cheese on top.
Place altogether, cover with a lid and cook down on medium heat until its almost evaporated. After 30 mins, remove the lid and cook down till syrupy, then cool.
Serve in a toasted bun and spread with ketchup, mayo and Frenchie’s mustard.
Add sliced dill pickles, sliced tomato , lettuce , smoked cheese, crisp bacon and any relish you have or use the below recipe.
