Chef Endo Kazutoshi recently announced the second part of his world tour of “Endo at Rotunda”, and we are thrilled to welcome Endo to Muse on Wednesday 10th July, where he will continue his tour, stopping in the UK for an exclusive one-night-only collaboration dinner, combining his Edomae style of sushi – a centuries-old technique particular to Tokyo – with Tom’s seasonally driven approach.
Endo was born in Yokohama, Japan’s second largest city just south of Tokyo. He is a third-generation sushi master, following in the footsteps of both his grandfather and father. Endo’s grandfather opened his own sushi restaurant in the 1940s, and Endo spent much of his childhood there or at the local fish markets watching the mongers prepare and shift their daily produce. Endo’s mother opened his eyes to other creative and disciplined artforms, a path that he now attributes as the greatest influence on his practice of sushi making and style of omakase.
The experience starts with Endo’s signature sushi bites which are a collaboration of flavours using some of Tom’s foraged herbs and plants, creating a fusion of East-meets-West. Other ingredients include wild rose infused olive oil, pickled, salted and dried cherry blossoms, foraged wild fennel pollen and horseradish.
Guests will continue with a series of new dishes from Muse, where Endo will also be adding ingredients and flavours creating a unique twist on Tom’s offering.
Expect a highly personal experience that focuses on the interpersonal connection between the host and guest. Like Muse, Endo’s courses are all prepared and served directly in front of guests. Tom and Endo both source everything locally where possible, just one the great synergies in their respective offering.
Endo says of the collaboration “Ever since I ate at Muse it has stuck in my head and so to be able to cook alongside Tom and bring our menus together – which both take inspiration from our childhood and memories – is something I’m very excited about. I’m also a big fan of the interiors so I’m looking forward to creating something different and unique in the space.”
