325g self-raising flour
100g cornflour (cornstarch)
70g caster sugar
4g fine salt
8g baking powder
4g baking soda
500ml buttermilk
250ml milk
3 eggs
90g unsalted butter, melted
20g vanilla essence/extract
Heat waffle iron. Lightly oil or spray.
In a large bowl, sift flour, cornflour, baking powder, baking soda, salt; whisk in sugar.
In another bowl, whisk eggs, buttermilk, milk, and vanilla.
Pour wet into dry and whisk just smooth.
Stream in melted butter while whisking until fully incorporated. Rest 5–10 mins.
Cook in hot waffle iron until deep golden and crisp (about 4–5 mins).
Serve: Maple syrup and ½ banana, sliced, sprinkled with light brown sugar and blow-torched to caramelise.
