Handful of raw oats
12 raw almonds with skin, sliced
1 tsp sunflower seeds
1 tsp pumpkin seeds
4 dried apricots, chopped
150ml coconut water, to soak
1 tsp chia seeds
2 heaped tbsp yogurt
Zest of any citrus
Grated or diced fresh fruit of your choice
Optional: a little peanut butter
Mix all ingredients together and leave to soak for 3–4 hours, or preferably overnight, to rehydrate.
Garnish with cut fruit, toasted flaked almonds, and a little fresh citrus zest (lime or lemon) before serving.
