Google Davos 2011

I was invited by Nikesh Arora and Eric Schmidt at Google through event agency Brandfuel to run a 3-4 day event with high profile financial guests in Davos. We turned a local café called Kaffe Klatsch into a Tom Aikens Pop up restaurant, where I created a 7 course tasting menu for 30 guests. The restaurant was completely built from scratch overnight, we had taken all the branding, look, feel, atmosphere from Tom Aikens and literally transported it all from London to Davos.

The type of guests was anyone from the chancellor of the exchequer George Osborne, Lakshmi Mittal, Len Blavatnik, the Reuben brothers etc. The event was behind closed doors and super high profile and it was the event that everyone wanted to go to. I got chosen to do the event through a succession of interviews that were run through the event company Brandfuel, they had asked 50 or so chefs from all over the world and through the course of interviews and emails over 2-3 months, I was amongst the final five that got put forward to Eric Schmidt with chefs ranging from Thomas Keller, Jean Georges, Alice waters. This was a great honour to be chosen and I then continued to do for this event for 3 years.

 

The menu for the first year was:

Canape

Chick pea chips
Polenta and parmesan beignet
Confit salmon pickled carrots

Starters

Salt cod brandade, watercress emulsion, spearmint, confit cod
Beetroot fondant, goats curd, honeycomb, blackberries

Main

Lamb fillet, ewe’s cheese, confit garlic
Pearl barley risotto, grated cauliflower, sorrel

Dessert

Coffee crème, coffee sponge, espresso syrup, coffee granules
Roasted pineapple vanilla, lemon thyme
