INGREDIENTS

500g Hulled strawberries (the tops taken off)

600g water

200g caster sugar

Peel of 1 lemon

1 vanilla pod (if you have it)

2-3 sprigs basil

2-3 sprigs thyme

Few heads of picked elderflower

POACHED STRAWBERRIES WITH ELDERFLOWER

METHOD

Bring all the above to a simmer and place the strawberries into a bowl. Pour over the hot simmering liquid, clingfilm and leave to cool. Place in the fridge for a day before using.
