2 oz vodka
¾ oz fresh lemon juice
¾ oz simple syrup
2 egg whites (for a silky foam)
Ice
Lemon twist or cherry, for garnish
Place the gin, lemon juice, simple syrup and egg white into a shaker.
Dry shake first, without ice, for about 10 seconds.
Add ice and shake again until well chilled.
Strain into a chilled coupe, or serve over ice.
Garnish with a lemon twist or cherry.
Add a dash of bitters on top for a more aromatic version
