250g flour
5g baking powder
5g baking soda
2.5g ground cinnamon
1g ground clove
2g salt
200g caster sugar
250ml veg oil
3 eggs
350g grated carrot
50g raisons
50g sultanas
160g orange juice reduced to 80g
300g icing sugar
Fine zest of one orange
Grease and line 2 oblong cake tins.
Sieve together the flour, baking powder, soda, clove, cinnamon and salt.
In a large mixing bowl whisk the sugar, oil, eggs until light and fluffy, then add the grated carrot.
Add the sifted ingredients, then add the dried fruit.
Place into the tins and bake for 45–60 mins.
Test with a skewer and if ready turn out onto a cooling wire.
Sieve the icing sugar.
Simmer the juice and whisk the sugar in until combined.
Drizzle the icing over the top of the cake once the cake is cooled.
