Bircher Muesli with Red Fruits

INGREDIENTS

BIRCHER MUESLI

150g rolled oats
130ml oat milk
100ml apple juice
100g thick Greek yoghurt
150g frozen then defrosted mixed red fruits, all juice reserved
1 Granny Smith apple cored and roughly grated
90g agave nectar
40g golden raisins
10g vanilla extract
20ml lime juice
40g walnuts lightly toasted and roughly chopped

Method

BIRCHER MUESLI

Put the oats into a large mixing bowl and add the milk and apple juice.
Stir and leave for 10 minutes to soften.
Add the yoghurt, grated apple, agave nectar, raisins, vanilla, red fruits and all their juice, walnuts and lime juice.
Stir well and cover with clingfilm pressed directly down onto the muesli.
Best eaten after a few days as the flavour improves.
Add a little more liquid if too thick.
