Banana & Chia Seed Cake

INGREDIENTS

     +    

100g ground almond
2g salt
30g chia seeds
30g flax seed, toasted
100g toasted hazelnuts, crushed
12g baking powder
8g bicarbonate soda
100g flour
30g blackcurrants

(Mix and toss all the above together)

450g mashed bananas
400g yogurt or buttermilk
4 eggs, room temperature
20ml vanilla extract

Method

     +    

Beat the eggs and brown sugar in a mixing bowl on full speed until light and fluffy. After 5 minutes, turn the speed down low and add the eggs, alternating with all the mixed dry ingredients.

At the end add in the mashed banana, vanilla extract, yoghurt and coconut oil and mix just for a minute

Place into a well greased, parchment lined cake or bread tin and bake at 180c for approx 30-40 mins.
