I was asked to become the consultant chef for just the royal box and the VIP areas at Wembley Stadium. The new Wembley stadium as we know opened with a bang, it was one of the most respected and globally recognised stadiums in the world and when it was finally demolished and rebuilt, I was not sure how the public would react. I got to see the real nuts and bolts of the stadium from when it was first built and saw the process of laying down the foundations of the pitch which was a little like layering a cake. I also had a very exciting moment of running out onto the pitch with no one around. I had a contract with Wembley for the upper tier of premium dining so got to watch a few great games as well.
