INGREDIENTS

2 portions of Albacore – approx. 100g each

3rd of a cucumber, cut into spaghetti

1 tsp of toasted sesame seeds

10 little baby potatoes

2 bashed garlic cloves

2 bay leaves

A few sprigs of dill

2 blood oranges that are segmented and zested

50ml olive oil

GRILLED ALBACORE TUNA

METHOD

Place the baby potatoes into a pan with water, 8g of salt as well the garlic, bay leaf and a piece of orange peel. Bring to a simmer, cooking until just tender and when almost ready, take off the heat and leave to cool for 15 mins. Cut potatoes in half, add a little olive oil, chopped dill and orange zest.

Place the cucumber spaghetti into a bowl with the toasted sesame seeds, some chopped dill, a little orange zest and seasoning.

Pre heat the oven to 200c with a heavy roasting tray in it. Lightly blanch the broccoli in simmering, salted water for 2-3 mins and then drain well in colander. Place a little olive oil onto the roasting tray, add the broccoli and cut potatoes and roast in the oven for 4-5 mins. Add the orange segments and juice before cooking for another 2-3 minutes.

Place the albacore onto a tin foiled tray, drizzle with olive oil, seasoning, a little fresh micro planed orange zest, then repeat on the top and bake in the oven at 160c for 6-8 mins until just cooked. Then serve altogether.

Place the cucumber onto the plate, the tuna on top and then the broccoli with the potatoes on the side.
