45g butter
55g flour
500ml milk (Hot)
4g black pepper
12g sea salt
30g cheddar cheese
30g Parmesan cheese
1 tsp Dijon mustard
Cut the cauliflowers into nice even florets. Place a pan of 4 litres water onto boil with 20G SALT TO 1 LITRE
Add the cauliflower (and broccoli if you wish)and cook less than normal, cooking for about 4-5 minutes, then refresh in cold
water. Keep some of the cooking water, as this can be used instead of 50% of the milk.
NOTE: The sauce needs to be a little thicker than normal as the cauliflower has extra water in it and will make the sauce too runny otherwise.
Bring the milk to a simmer. Melt the butter in a separate pan, add the flour to the butter and cook out for 2-3 minutes, stirring regularly. Pour the milk little by little into the flour stirring all the time. Have the heat on low so it’s not too hot. Add the salt, pepper and bring to a slow simmer, cooking for 5 minutes and add the mustard and both cheeses.
30g Grated cheddar
30g Grated parmesan cheese
Mix all the above together, place the cauliflower into a casserole dish and add the sauce over the top. Coat with extra grated cheese and place under the grill to colour. Bake in the oven at 200c for 15 minutes unti golden and hot.
