I had the opportunity to go on the Great British Menu as a contestant for a second year. The first year I was up against Tom Kerridge, and he beat me fair and square in the regional final. I seem to remember that he won that banquet, so I was always going to come back and try and get to the final. The theme of this year’s banquet was tied in with the comic relief, so the dishes had to make you smile – which I hope they did! My starter was ‘chicken egg, egg chicken’, presenting the challenge of which to eat first. It was this dish that got me to the final. It was a lovely rich intense consommé, with a slow cooked egg yolk, truffle, breast, little flaked leg meat and some tiny little veg garnish and a cooked langoustine. The consommé was poured table side, then the egg part of the dish was an intense savoury custard, that was as light as a feather. I think the dish got all tens, so happy days.
