I was there very first mymuybueno Chefs Get Personal interview in 2017, mymuybueno is a luxury food and lifestyle brand with multiple divisions within the group which was Founded in 2011 by Justine Murphy.
The name is down to there love of the beautiful island of Mallorca and it is the heart and home of the Founder Justine Murphy and her family. It is the inspiration for her vision and dream, alongside her wealth of experience in the field of which we all should operate. They have a Cookery School, a multiple award winning Deli and a Luxuryware showroom selling home goods, I am really looking forward to cooking here as I always love to teach students new techniques.
The dishes that I will be preparing are the following:
Starter Root & Stem salad with mandarin dressing – a mixture of root vegetables prepared in various ways, from raw, baking, pickling and sous vide, in this dish you will learn certain Knife Skills, pickling, sous vide and practise of compressing
Then a fish course of John Dory, with cauliflower, minted squid and jasmine, learning fish preparation and cooking sous vide, pickling, herb oils and water bathing squid
Dessert is Green tea & yogurt aspuma, the green tea icecream will be in a paco jet, the green tea mousse is made using the bombe recipe. Then we make a green tea sponge that’s layered up & pressed, served with the green tea sorbet.
