  • 250ml of water
  • 50g of butter
  • 70g of plain flour
  • 100g of Parmesan, grated
  • 4 eggs
  • 1/2 tsp English mustard
  • salt
  • pepper
  • polenta for dusting
  • vegetable oil, for frying
